Paweł Kwiatkowski, owner of the Tamka 43 restaurant, talks to the Voice’s Bożenna Osucha.

Tamka 43 has been listed this year in the Michelin Guide for the first time. The restaurant was awarded three “forks and spoons” for its décor, comfort and service quality. Are you going to strive for more?
We are very happy about this distinction. After receiving many prestigious Polish and a few foreign distinctions, the three “forks and spoons” from Michelin is another indication that the effort we make every day to position Tamka 43 as one of just a few exclusive Polish restaurants has paid off. We are determined to pursue our philosophy in running the restaurant so as to achieve the best results possible in the years to come and meet the culinary needs of our customers on a daily basis. It is our priority to offer them special culinary experiences. We believe that both our customers and anonymous Michelin inspectors will appreciate the results of our work.

But Tamka 43 is not only a restaurant.
Tamka 43 is a unique meeting place created to pamper the senses of those who are able to appreciate good taste. Tamka 43 is a restaurant with a short and frequently changing menu based exclusively on the best seasonal products, a wine bar with an impressive wine list composed by our sommelier, and a café serving the best coffees, teas and desserts made by our pastry cook.

Tamka 43 is the perfect place to go to with your family and friends, or to hold a business meeting. We also organize special events and have a conference room, which is often used by our clients.

What would your chef Robert Trzópek recommend to customers?
Everyone can find something special on our menu. As I said, the menu is short because of seasonality and our efforts to offer top-quality products. This is why the menu is changed frequently. However, it includes dishes which have been on it since the beginning because of their huge popularity with our customers. Among these dishes is an excellent risotto with truffles and beef cheek with celeriac puree and Madeira sauce, which won an award at the Wine & Food Noble Night 2011. Our specialty is our unique dessert—roasted beetroot with sorrel granita, described by Malemen Magazine as “an unusual culinary discovery.”

Apart from working as a restaurateur, you are also involved in other activities. Could you tells us briefly about the Great Football Exhibition?
Indeed, apart from running Tamka 43, I am also one of the owners of the STX Jamboree music marketing agency and a promoter and have come up with ideas for many cultural, mainly music, events. Additionally, I have organized several exhibitions at the Palace of Culture and Science in Warsaw, exhibitions which have attracted more than a million visitors between them. This year, until late autumn, we want to encourage everyone to see the Great Football Exhibition, which promotes the achievements of Polish and European soccer. It features unique shirts and boots, memorable pennants, interactive installations and other items. The exhibition is designed to teach and entertain, and is of interest to the whole family. Meetings with soccer players and the most important figures in Polish soccer are also held at the exhibition. The curator of the exhibition is my friend, Stefan Szczepłek, a well-known journalist and expert on soccer, but also a music lover and someone who is interested in the history of Warsaw.
