You are the first raw&living food restaurant in Warsaw. What is raw&living food exactly?
Raw food is a diet that only uses fresh fruits, vegetables, seeds, nuts and herbs along with premium foods such as Goji and Inca berries, raw cocoa seeds and so on. None of those ingredients are subjected to heat treatment other than drying in a dehydrator, but even then the temperature never exceeds 42 degrees Celsius. But all food essentially stays raw to make sure that nutrients, including enzymes and vitamins, remain intact, since cooking usually breaks these down.

The chefs at our restaurant only use techniques such as grinding, drying in a dehydrator and pickling. As a result, our dishes are made of live ingredients that abound in minerals, nutrients, vitamins and enzymes and are free from refined sugars and fats, sodium glutamate, animal products and preservatives. Our menu is also 100 percent gluten-free.

Raw food dishes are easily digestible, inventive, boost your strength and help you stay fit. Our medical consultant is Edyta Biernat-Kałuża, M.D., who champions a fruit-and-vegetable diet and who helped found Poland’s first Center for Dietary Medicine.

What kind of people come to your restaurant?
They are people who want to eat healthily and some are also looking for a culinary adventure. We have patrons who are vegans and others have to stay on a gluten-free diet. Our door is open to everyone.
