Thanksgiving Day at Blue Cactus

Thanksgiving Day is one of the most important celebrations in North America. Celebrated on the fourth Thursday of November in the United States and the second Monday of October in Canada, Thanksgiving is a time for families to get together and be grateful for the past year.

In the U.S. Thanksgiving Day falls on Nov. 26 this year and many American expats in Poland are planning to have a traditional Thanksgiving dinner. The Blue Cactus restaurant in Warsaw, as in previous years, has put together a special Thanksgiving menu, complete with traditional roast turkey.

Blue Cactus owner Piotr Grajewski says that over the two decades the restaurant has been in existence, it has tried many different Thanksgiving turkey recipes. “Several years ago, we settled for one simple recipe brought from the United States and used by the grandmother of a chef who works with us,” says Grajewski. “The key to it is to cure the turkey for a whole day and night in brine with copious amounts of bay leaves and pimentos. The cured turkey is then filled with a special stuffing and roasted for two hours per every 5 kilograms. It is best served with cranberry sauce.”

The Thanksgiving Day menu at the Blue Cactus will also feature such American staples as pumpkin soup, mashed sweet potatoes, green beans with bacon and roasted almonds, and pumpkin pie.
